1. Chicken Enchiladas
Prep Work: Cook 1 ¼ lb ground chicken with 1 onion, cut up. Shred 2 cups cheddar or mont jack chz
Cooking Day: Mix together chicken, 1 cup sour cream, 2 cups cheddar or mont. Jack chz, 1 can refried beans, and 1 can enchilada sauce.
Serving Day: Bake in a covered casserole dish at 350. Cook for about an hour and a half- 2 hours. Serve on top of warmed tortillas.
2. Sesame Chicken
Prep: cut up ½ cup green onions
Cooking Day: Mix into a freezer bag: ½ cup olive oil, 1 cup white grape juice, ½ cup soy sauce, 1 tsp Ginger, 1 Tbl dry mustard, 1 tsp ground pepper, 4 cloves crushed garlic, ¼ cup sesame seeds, green onions, and 3 lb. chicken breasts
Serving Day: put ingredients into crock pot. Cook on low for 6-8 hours. (Or high for 3-4 hours)
3. Honey Lime Chicken
NO PREP WORK
Cooking Day: Combine in a freezer bag: 2 lbs chicken, 1/2 Tbl Garlic, 1 (20 oz) can Pineapple Rings, 1/4 cup Honey, 3 Tbl Lime Juice, 2 Tbl Soy Sauce, 1 Tbl Cornstarch, 1 Tbl peanut oil
Serving Day: Cook in crock pot on low 6-8 hours
4. Mediterranean Chicken and Wild Rice
NO PREP WORK
Cooking Day: Combine in freezer bag: 1 lb chicken breast, 1 cup wild rice blend, 10 cloves crushed garlic, ½ cup sun-dried tomatoes (packed in oil, or if dry, soak in oil to cut), ½ cup capers, 2 cups water, ½ cup lemon juice, ¼ cup olive oil
Serving Day: Cook in crock pot on low for 6-8 hours.
5. Chicken Piccata
NO PREP WORK
Cooking Day: Grate 1 lemon peel and chop 2 Tbl fresh parsley Combine in a freezer bag: lemon peel and parsley, 1 lb chicken breast, 1 Tbl butter, 1 Tbl olive oil, ½ cup chicken broth, 2 tsp lemon juice
Serving Day: Cook in crock pot on low for 6-8 hours. Great to serve with salad and butter pasta.
6. Chicken Lo Mein
Prep Work: Cut 1 lb. chicken breast into thin slices
Cooking Day: Combine in a freezer bag: 1 tablespoon sesame oil, 1 lb boneless skinless chicken breast, cut into thin slices,1 clove minced garlic, 2 Tbl soy sauce, 2 tsp freshly grated ginger, 1 3-oz package chicken flavor ramen noodle soup, 1 1-lb bag frozen mixed oriental vegetables, 1/4 cup water
Serving Day: Cook in crock pot on low for 6-8 hours.
7. Chicken Noodle Casserole
Prep Work: Cook and shred 2 cups chicken, shred 1 cup mont jack chz, shred 1 cup cheddar chz, chop ¼ cup green pepper, chop ¼ cup red pepper, chop one small onion, cook and drain 12 oz. egg noodles
Baking Day: Combine all ingredients except ½ cup of each cheese in freezer bag and add: 2 Tbl lemon juice, 10 oz. can cream of chicken soup (*note: add noodles last) In a separate freezer bag, put remaining cheese.
Serving Day: Defrost and transfer to casserole pan. Stir in ½ cup mayonnaise. Bake for 30 min at 350. Add cheeses on top, bake another 10 minutes.
8. Chicken/Wild Rice
Prep Work: cook and chop 2 slices bacon, chop ½ cup onion, chop ½ cup celery
Baking Day: Combine in a freezer bag: bacon, onion, celery, 3 Tbl olive oil, 1 ½ lb chicken, 2 Tbl Worchestershire sauce, ½ tsp. dried sage, 1 cup long- grain white rice, 1 pkg (4 oz) wild rice, 6 oz. mushrooms, 3 cups chicken broth, and 2 Tbl chopped parsley
Serving Day: Cook in crock pot on low 4-6 hours or until rice is tender.
9. BBQ Chicken
NO PREP WORK
Baking Day: Combine in freezer bag: 2 lb. chicken, 3 cup BBQ sauce
Serving Day: Add 2 cups water, cook in crock pot on low for 4-6 hours.
10. Orange Chicken
Prep Work: Cut 1 lb chicken into strips
Baking Day: Combine in a freezer bag: chicken, 1 ½ Tbl Dijon mustard, 1 ½ Tbl frozen, thawed orange juice concentrate, 1 ½ Tbl honey, 1 tsp sesame oil
Serving Day: Thaw and cook chicken in marinade. Serve with rice and veggies.
11. Poppy Seed Chicken
Prep Work: Cut and shred 4 cup chicken
Baking Day: Combine in freezer bag: chicken, 2 can cream of chicken soup, 1 cup sour cream, 2 Tbl poppy seeds
Serving Day: Cut off freezer bag and place in casserole dish. Bake for 1 ½ hour at 350. Mix ½ cup melted butter, 4 oz crushed Ritz crackers and cover chicken mix. Bake 10 more minutes.
12. Lasagna
Prep Work: Cook 2 lbs ground beef, cook ½ box lasagna noodles, shred 2 cups mozzarella cheese
Baking Day: Will need 24 oz spaghetti sauce. Mix together in bowl: 8 oz Ricotta cheese, 8 oz cottage cheese, mozzarella, ½ cup parmesan cheeseLayer in baking dish: ground beef covered in sauce, lasagna noodles, cheese mix, repeat. Top with parmesan cheese.
Serving Day: Cook 1 ½- 2 hours at 350.
13. Beef Enchiladas
Prep Work: Shred 2 cups cheese, cook 2 lb. ground beef
Cooking Day: Mix together beef, 1 cup sour cream, cheese, 1 can refried beans, and 1 can enchilada sauce.

14. Macaroni- Beef Casserole
Prep Work: Shred 3 cups cheddar cheese, cook and drain 2 lb. ground beef, cook and drain noodles from 1 box Kraft mac-n-cheese
Baking Day: Combine in a freezer bag: cheese, noodles, ground beef, ½ cup milk, ½ cup butter, and Kraft cheese mix.
Serving Day: Cut off freezer bag and place in casserole dish. Bake 1 1/2 -2 hours at 350.
15. Spaghetti Casserole-
Prep Work: Cook noodles, cook 2 lb. ground beef, shred 2 cups mozzarella cheese
Baking Day: Combine in freezer bag: noodles, beef, 3 cups spaghetti sauce, and ½ cup parmesan cheese. Freeze separately: mozzarella, a bit of parmesan, and Italian seasoning.
Serving Day: Place noodle/sauce mix in casserole dish, cover with cheese mix. Bake 1 ½-2 hours at 350.
16. Hard Taco Meat-
Cook 3 lb. ground beef with taco seasoning and shred 2 cups cheese. Freeze in separate freezer bags.
Serving Day: Serve with taco shells, and veggies.
17. Zippy Meatballs
NO PREP WORK
Baking Day: Combine 1 lb hamburger, 2 eggs, 9 dashes of Tabasco, 1 cup crushed crackersdash of salt, 2 Tbsp minced onion, pepper 1/4 tsp garlic ---Shape into meatballs (I use a cookie scoop) and place in freezer bag.Make Sauce in separate freezer bag: 3/4 Cup Catsup, 1/2 Cup water, 1/4 Cup Vinegar, 1/2 Cup Brown Sugar, 1 1/2 tsp minced onion, 4 tsp Worcestershire sauce, 1 1/4 tsp salt, 6 dashes of Tabasco
Serving Day: Defrost. Place meatballs in casserole dish and bake 30 min at 350, cover with sauce. Bake 45 min longer.
18. Sauced Steak in a Crock
Prep Work: Chop 1 small onion
Baking Day: Combine in a freezer bag: onions, 2 lbs steak, 3 cups A1 sauce, 1 cup water, 1 tsp each: salt, pepper, garlic
Serving Day: Cook in crock pot on low for 6-8 hours. Add water or chicken broth so sauce covers meat.
19. Beef Stroganoff
Prep Work: chop one small onion, cut 1 ½ lb steak into strips
Baking Day: Combine in a freezer bag: onions and steak, ¼ cup flour, 1 clove minced garlic, 1 Tbl soy sauce, 1 beef bouillon cube, 1 cup water, 10 oz can of cream of mushroom soup. (mix flour well)
Serving Day: Cook in crock pot on low for 6-8 hours. Add 8 oz cream cheese (cut into cubes) during last ½ hour. Serve over egg noodles.
20. Beef Burgundy
Prep Work: cut 1 ½ lb steak into 1 inch pieces, chop 1 small onion
Baking Day: Combine in a freezer bag: steak and onion, 1 can (10 3/4 oz) condensed cream of mushroom soup, 1 cup red wine, 1 can (4 oz) sliced mushrooms, drained, 1 package (1 oz) dry onion soup mix, 1 Tbl minced garlic
Serving Day: Cook in crock pot on low for 6-8 hours
21. Peppercorn Steak
Prep Work: Chop 1 Yellow Pepper , 1 Green Pepper, 1 onion
Baking Day: Combine in freezer bag: peppers and onion, 6 steaks , 1 cup tomato sauce, 1/2 cup Worcestershire sauce, 1/4 cup of water, 1 T Italian seasoning, 1/4 t black pepper
Serving Day: Cook in crock pot on low for 4-6 hours.
22. Steak Fajitas
Prep Work: Cut into strips 2 lb. steak, 1 red pepper, 1 green pepper, 1 onion
Baking Day: Combine in a freezer bag: steak, peppers, onions, 1 cup soy sauce, ¼ cup honey, 1 Tbl Worchestershire sauce, 1 tsp minced garlic, 1 tsp ground ginger, 1 cup water
Serving Day: Thaw. Stir fry just until meat is done. Serve with warm flour tortillas.
23. Crock Pot Burritos
Prep Work: chop 1/3 cup onion
Baking Day: Combine in a freezer bag: 1 ½ lb steak, 14.5 oz diced tomatoes (undrained) , onion, ½ tsp each: oregano, cumin
Serving Day: Cook on high for 4-5 hours, shred and serve in tortillas with cheese, salsa, sour cream
24. Crock Pot BBQ Steak
Prep Work: Chop 1 small onion
Baking Day: Combine in a freezer bag: onions, 2 lbs steak, 3 cups BBQ sauce, 1 cup water, 1 tsp each: salt, pepper, garlic
Serving Day: Cook in crock pot on low for 6-8 hours. Add water or chicken broth so sauce covers meat.
25. Crock Pot Chops
Prep Work: Chop 1 small onion
Baking Day: Combine in a freezer bag: onions, ½ cup lemon juice, ½ cup oil, 2 lbs pork chops, 1 tsp each: salt, pepper, garlic
Serving Day: Cook in crock pot on low for 6-8 hours. Add water or chicken broth so sauce covers meat.
26. Crock Pot Pork
Prep Work: chop 1 sweet onion, and 1 green pepper
Baking Day: Combine in a freezer bag: 3 lb. pork roast/chops, 3 T. chili powder, 1 small can tomato paste, 1/4 c. brown sugar
Serving Day: Cook 8-12 hours on low.
27. Sauced Pork
Prep Work: Chop 1 small onion
Baking Day: Combine in a freezer bag: onions, 2 lbs pork steak/chops, 3 cups A1 sauce, 1 cup water, 1 tsp each: salt, pepper, garlic
Serving Day: Cook in crock pot on low for 6-8 hours. Add water or chicken broth so sauce covers meat.
28. BBQ Chops in a Crock
Prep Work: Chop 1 small onion
Baking Day: Combine in a freezer bag: onions, 2 lbs pork chops, 3 cups BBQ sauce, 1 cup water, 1 tsp each: salt, pepper, garlic
